This Easter weekend, Chef Hector Laguna and his culinary team have a trio of carvery offering including prime rib, roast ham and lamb leg, as well as Botanist brunch favourites such as crab & avocado benedict and salmon tartine. Head Bartender Jeff Savage has created two new easter-inspired cocktails to kick start your morning. ‘Springtime Skies’ is a gin based cocktail, made with dry curacao, lavender, white cacao, breakfast tea, lemon, and clarified milk. ‘Treasure Hunt’ is made with oloroso sherry, Italian herbal liqueur, menthe-pastille, and cacao.
The three-course experience includes a glass of sparking wine, hand crafted cocktail, and choice of appetizer, main, and dessert for $78.00 per person.
Reservations are strongly recommended and can be made through OpenTable experiences. View the full three-course Easter brunch menu here.
For those looking to enhance their experience, spend the weekend at Fairmont Pacific Rim with the Canadian & Washington Residents Offer, an exclusive rate that includes late check-out and complimentary parking.
