Fairmont Pacific Rim’s Executive Chef Damon Campbell’s food truck stands at center stage of the patio, serving a playful menu of appetizers to mains with ever-changing desserts. Guests can choose from mouth-watering food options, like the Ahi Tuna Poke Bowl, the Crispy Thai Chicken Wings and the West Coast Crab & Shrimp Sandwich, all packaged perfectly for outdoor dining and activities.
To wash it all down, award-winning Creative Beverage Director Grant Sceney has assembled a line-up of refreshing libations, with agave-centric cocktails like the Sandía Margarita with tequila, Aperol, watermelon, grapefruit, lime and Tajín, and the Chilosa Margarita with Don Julio Blanco, mezcal, cointreau, pineapple, lime and firewater, alongside a vast selection of craft beers and extensive wine list.
