This is the chef collaboration you’ll be telling your friends about all year! Two landmark restaurants come together in an explosion of flavours, culinary technique and top-level cocktails when Botanist welcomes Toronto’s celebrated Alo for an amazing collaboration experience through VISA Infinite. Botanist, already one of Vancouver’s favourite places for refined West Coast dining, welcomes the team from Toronto’s Michelin-starred Alo for a feast of elegant flavours and culinary creativity. Alo’s Chef-Owner Patrick Kriss is one of the most highly lauded chefs in Canada; he brings with him Corporate Chef Matthew Betsch and Bar Manager Lee Bonds. They will join Botanist Chef Hector Laguna, who sources the brightest, freshest ingredients from farm, field and forest for his flavourful fare, as well as the multi-award-winning cocktail team led by Grant Sceney and Jeff Savage. Pac Rim Patio Pop-Up
The Pac Rim Patio Pop-Up is back for another summer of fun, opening for the season on Thursday, May 18. New this year, we’re pulling off the ultimate collaboration series as we bring together Vancouver’s top chefs to showcase their globally influenced cuisine. This series will see some of the city’s most celebrated chefs and restaurants serve up their favourite comfort food of choice from the food truck. In a celebration of culture, community, and comfort food in a casual way, come connect with your friends, family, colleagues, and sit back and relax in the Vancouver sun. Keep an eye out for the full calendar line-up to be announced.
Fairmont Pacific Rim’s Executive Chef Damon Campbell’s food truck stands center stage of the patio, serving a playful menu of appetizers, mains and refreshing desserts perfect for outdoor dining or packaged for take-away to enjoy while exploring Vancouver. To accompany Campbell’s dishes, Creative Beverage Director Grant Sceney has assembled a line-up of refreshing Malfy Gin cocktails including a series of G&T’s, Spritzes and other summer time sippers, alongside an extensive selection of craft beers and local and international wines.
The outdoor patio will be open Thursday to Sunday from 12:00 p.m. to 8:00 p.m., with live music daily on Fridays and Saturdays until 8:00p.m., and until 6:00 p.m. every Thursday and Sunday.

Omakase in The Lobby Lounge & RawBar
In the Lobby Lounge & RawBar, you can find award-winning MICHELIN starred sushi chef Masayoshi Baba. As he continues to lead our sushi program, come by for lunch or dinner and experience the Omakase experience. Seatings are available Monday – Friday, right in front of the action at the sushi bar. With limited seating, each visit will be personalized as you get to spend time with one of our talented sushi chefs—asking questions, tasting different kinds of fish, and watching first-hand the processes that go into each and every bite.
