On February 22 and 23, Botanist Executive Chef Hector Laguna will welcome internationally acclaimed Chef-Owner Julien Royer of Odette, a two Michelin star rated restaurant in Singapore for an exclusive culinary collaboration which will mark Chef Royer’s Canadian cooking debut.
For two nights only, these culinary masters will join forces to design a seven-course tasting menu that fuses the Modern French cuisine of Odette and Pacific Northwest flavours of Botanist. Chef Royer and his team will serve and profile three of his creations from the kitchen of Odette, while Chef Laguna will design three original dishes that reflect the botany of the region.
Award-winning chef Julien Royer’s menus at Odette pay homage to Royer’s grandmother – one of his greatest influences in life and in the kitchen. The renowned restaurant serves Modern French food that is guided by Royer’s lifelong respect for seasonality, terroir and artisanal produce. Termed Essential Cuisine, Royer’s dishes are honest and refined in their simplicity, showcasing the best produce from around the world.
In 2017, Royer led Odette to its historic debut on the Asia’s 50 Best Restaurants 2017 list at 9th place –the highest new entry in the history of the list – and the World’s 50 Best Restaurants 2017 Long List at 86th place. The restaurant was also inducted into the prestigious Le Grande Tables Du Monde in the same year.

The tasting menu will be available for dinner service only on February 22 and 23 for $188.00 CDN per person plus applicable taxes and gratuity (additional $90 for optional wine pairing).
