Do It Yourself Dine-Around
Start the evening at St. Lawrence (269 Powell St) and put your name on the list for a seat at their chef bar table (arguably the best seat in the house). Proceed up the road to The Mackenzie Room (415 Powell St) for a seasonal punch for two, served in a traditional punch bowl. You have likely worked up an appetite on your walk over, so order up a serving of the chicken of the sea: sea urchin pate, ink brioche and poached Hazelnut pear to start. Make your way back to your seat at St. Lawrence for a French 75 cocktail with a side of Foie Gras and Beef Tongue, expertly seared. After you have polished off your plates, head over to Kissa Tanto (263 E Pender St) and saddle up at the bar (walk-ins only) for a ‘Four on Six Sours’ cocktail and a plate of the Tajaran pasta to warm you up before a main course of Whole Fried Fish and Japanese Eggplant. If you’re not ready to settle in for the night, walk down the road for a nightcap at the Keefer Bar (135 Keefer St) for their signature Rosemary Gimlet: Beefeater Gin and rosemary lime cordial.

A Day in the Great Outdoors
Nestle into nature with a trip to one of Vancouver’s three local mountains and explore by way of skis, snowboard or snowshoes and take in the fresh alpine air. At the Peak of Seymour Mountain, there is nothing more rewarding after an early morning rise than the view looking back to downtown Vancouver, the Burrard Inlet and Vancouver Island. Getting up for first chair also means less traffic on the mountain, and untracked snow terrain on a fresh powder day. Make your way down the mountain and stop at Capilano Suspension Bridge for their Canyon Lights display (November 24-January 27), where hundreds of thousands of lights are strung along the suspension bridge, Treetops Adventure and Cliffwalk, transforming the park into a winter wonderland. The 30-ton Douglas firs receive star treatment, reaching up to 110 feet above the forest floor, making them the eight tallest Christmas trees in the world. Back downtown, finish off the day with a skate at Robson Square Ice Rink. The rink is located in the very heart of the city next to the Vancouver Art Gallery and Robson Street shopping district, this covered ice rink means it’s open rain or shine.

A Dose of the Arts
Vancouver’s evolving arts and culture scene offers a wide variety of activities from theatre and film to galleries and museums. Spend an afternoon viewing The Metamorphosis exhibition at the Vancouver Art Gallery (750 Hornby St). The exhibition brings together contemporary art from the Vancouver Art Gallery’s permanent collection, several that will be on view for the first time. Across the city, check out Indigenous art and a rotating exhibition at the Museum of Anthropology at the University of British Columbia (6393 NW Marine Dr). The museum houses over 50,000 works from almost every part of the world and has a strong focus on artistic diversity and the links between art and community. Finish the day watching a theatre performance at one of three Arts Club stages, the largest theatre company in Western Canada. Explore the unique art and architecture that defines Fairmont Pacific Rim via our 35 minute self-guided tour. Explore the public art and architectural detail at the property, beginning outside and gradually returning back inside to the works throughout the public areas of the hotel. Under the direction of owner/developer, Westbank Projects Corp., the collection is not themed, rather driven by interest and passion.
