Two Michelin-starred Birdsong restaurant joins Botanist for a one-of-a-kind collaboration dinner, bringing flavours from San Francisco for a highly-anticipated event in the heart of Vancouver.
On Wednesday, August 21, San Francisco’s two Michelin-starred restaurant Birdsong helmed by award-winning Chef Chris Bleidorn will join us at Botanist for a dining experience you won’t want to miss. Featuring eight courses and expertly curated cocktail and wine pairings, this collaboration dinner will combine Birdsong’s passion for seasonal whole ingredients with Botanist’s creative approach to Pacific Northwest cuisine.
Situated in San Francisco’s vibrant Theater District, Birdsong opened its doors in 2018. The restaurant prides itself on curating menus that celebrate ingredients in their purest form, sourced from producers who respect the rhythms of the ecosystems they live in.
Chef Bleidorn and and his team will impress with an amuse-bouche and three signature Birdsong creations, while Chef Laguna will feature three Botanist dishes. Highlights from Chef Bleidorn’s menu include marinated seaweeds from the Vancouver and Mendocino coasts paired with local halibut, and a sea urchin cream puff with a savoury butterscotch filling. Chef Laguna’s dishes include sweetcorn and truffles, and grilled black lamb with black garlic mole. The grand finale? A decadent pre-dessert crafted by Birdsong’s Chef Zoee Wong and dessert by Botanist’s Executive Pastry Chef Kate Siegel.
