Chef Bleidorn and and his team will impress with an amuse-bouche and three signature Birdsong creations, while Chef Laguna will feature three Botanist dishes. Highlights from Chef Bleidorn’s menu include marinated seaweeds from the Vancouver and Mendocino coasts paired with local halibut, and a sea urchin cream puff with a savoury butterscotch filling. Chef Laguna’s dishes include sweetcorn and truffles, and grilled black lamb with black garlic mole. The grand finale? A decadent pre-dessert crafted by Birdsong’s Chef Zoee Wong and dessert by Botanist’s Executive Pastry Chef Kate Siegel.
