We have taken guests on a daring journey through the streets of New York with Overstory and Katana Kitten, hustled through the bustle of Mexico City through Hanky Panky, ventured through hilly terrain with Lazy Bear and True Laurel Bar, and countless more culinary and bar adventures.

Our goal is to foster collaborations that can nurture the botanical richness of the Pacific Northwest to a global audience, while also providing opportunities for us to discover and appreciate a rich array of international flavors.

Join us at Botanist Bar on Thursday, May 30 as Creative Beverage Director, Grant Sceney welcomes Michelin-starred, Toronto-based Quetzal for a collaborative cocktail experience.

Quetzal celebrates regional Mexican cuisine, inspired by traditional flavours and cooking styles, all cooked over a 28 foot-long open wood fire. In 2023, the bar team at Quetzal was awarded the Michelin Guide’s Toronto Exceptional Cocktail Award.

Botanist is home to four diverse venues: a Cocktail Lab and Bar, Garden, Dining Room and TASCHEN Library; all inspired by the principles of botany and the Pacific Northwest. The menu features ingredients sourced from their natural landscape, coupled with contemporary techniques; designed to showcase the best version of themselves.

The award-winning Botanist Bar program features a list of sophisticated yet whimsical cocktails, with a select number of chemist-like designs under the direction of creative beverage director, Grant Sceney. Since opening, Botanist Bar has received notable accolades including ranking number 24 in World’s 50 Best Bars North America, Michter’s Art of Hospitality award, number 2 in Canada by Canada’s 50 Best Bars, ‘Bols Around the World’ World’s Best Bar Team, Regional Honorees – Best Restaurant Bar by Tales of the Cocktail Spirited Awards, named one of the best new bars in the world by the 2018 Condé Nast Traveller Hot List and most recently received the MICHELIN Exceptional Cocktails Award.
