Fairmont Pacific Rim is thrilled to announce a sweet, exciting collaboration at Botanist. Executive pastry chef, Kate Siegel, will be teaming up with Eunji Lee, the celebrated and award-winning pastry chef from Lysée in New York. The unique experience will offer guests a one-night-only, six-course dessert tasting menu, complete with signature wine pairings.
Lysée, located in New York City’s Flatiron neighborhood, opened its doors in June 2022 to industry success and fanfare. Inspired by her love of pastry as edible art, Lysée’s name is inspired by Chef Eunji’s sweet museum, derived from the French word Musée. Chef Eunji fulfilled her dream of studying pastry arts in France and trained at Le Meurice under Alain Ducasse and Cedric Grolet. In 2022, she opened Lysée and has since been named one of La Liste’s Pastry Talents of 2023, Food and Wine’s Best New Chefs of 2023, and a 2024 James Beard Award Semifinalist for Outstanding Pastry Chef.
Chef Kate and Chef Eunji have collaborated to create an unforgettable experience, featuring a range of decadent and innovative desserts that showcase their individual styles. From classic favorites to avant-garde sweet creations, each dish has been meticulously crafted to reflect the distinct talents of both chefs.
