Each Wednesday evening, Chef Hector Laguna presents ‘Celebrating Seasonality’ — a four-course, plant-forward tasting menu that brings together vibrant, vegetable-driven dishes designed to showcase the freshest ingredients. It is a celebration of nature’s bounty, elevated through the artistry of Chef Hector’s culinary vision and a must-try for those seeking exceptional vegan food in Vancouver.

The journey begins with an irresistible amuse-bouche: Beet and Squash Tartare served on a tapioca crisp. The sweetness of the beetroot and squash meets the satisfying crunch of the tapioca, while a sprinkle of grated horseradish adds a zesty kick – the perfect way to awaken your taste buds for what’s to come.

Next, indulge in our Roasted Cauliflower course, where the vegetable’s earthy flavours are beautifully balanced with tangy pickled vegetables, sunchokes and salsa macha – a Mexican condiment made from vegetable oil, dried chilies, garlic and salt, that pays homage to Chef Hector’s roots.

Our third course takes you on a journey of textures and umami-rich flavours. Grilled tofu is paired with wild mushrooms, celeriac, onion jus and Périgord truffles.  It’s a dish that highlights the harmony of plant-based ingredients in a truly indulgent way.

For a sweet finish, Executive Pastry Chef Kate Siegel presents her Tropical Vacherin. This vegan dessert features bright, refreshing flavours of mango, pineapple and passion fruit, topped with crunchy coconut meringue. It’s like a tropical vacation in every bite.

Celebrating Seasonality‘ invites diners – whether plant-based devotees or curious newcomers – to slow down and savour each bite. Unwind, celebrate with friends or simply enjoy a moment of culinary indulgence with exceptional vegan food in Vancouver

This experience is available for $97.00 per person. For those looking to take their dinner to the next level, curated wine pairings can be added for $79.00 per person (excluding taxes and gratuities).
