Bonus: one recipient will be the lucky winner of The Golden Ticket, instead of an overnight guest room experience, this lucky individual’s advent calendar will receive the ultimate upgrade to an evening in one of Fairmont Pacific Rim’s specialty suites, which traditionally runs for $15,000.00 CAD per night. Gather ’Round the Botanist Table
Botanist will celebrate the holiday season with a multi-course festive brunch on Christmas Day, and New Year’s Day, featuring a selection of carving stations and seasonal punch cocktails accompanied by live music, for $78.00 CAD per person. A six-course dinner tasting menu is offered on Christmas Eve and Christmas Day for $148.00 CAD per person with optional wine pairings.
On New Year’s Eve, executive chef Hector Laguna will prepare an exclusive six-course tasting menu with dishes including Snow Crab, Ora King Salmon, and Oven-Roasted Lamb Rack. The tasting menu experience is available for $148.00 CAD per person, with the option to add wine pairings for $70.00 CAD or $110.00 CAD.

Botanist Bar’s newly introduced cocktail and food pairing experience that celebrates the flavours of the Pacific Northwest is a great way to toast to the holidays, or makes for the perfect gift-giving experience. With inventive and experimental cocktails paired with creative cuisine, the collaboration between Head Bartender Jeff Savage and Executive Chef Hector Laguna will take guests on an adventure where cocktails and cuisine meet innovation. Available only at the exclusive VIP table off the Botanist Bar, two seatings for groups up to four are available nightly from Wednesday through Saturday evenings at 5:30pm and 8:30pm for $210.00 CAD per person. The Lobby Lounge team is shaking up the festive season with a collection of take away bar kits for the host with the most. The Holiday Cocktail Kit comes complete with house-made egg nog, hot buttered rum and gingerbread old fashioned cocktails. Leave the home cooking fuss to the pros with the introduction of Executive Chef Damon Campbell’s takeaway holiday dinner, available on December 24 and 25 only. Guests will enjoy a feast with all the fixings and the choice of a Classic Beef Wellington or Herb Fennel Citrus Crusted Herb Salmon accompanied by detailed cooking instructions, along with holiday inspired sides and dessert, and the choice of optional meal enhancements to further elevate the dinner experience. Oh, Christmas Tree
Local Christmas tree farmer, Evergrow will be onsite daily at Fairmont Pacific Rim from December 6 to 23 selling a collection of mini to full-size live Christmas trees with purpose, as each tree will be re-planted and facilitated by Evergrow, post-holiday celebration.
Good Riddance, 2020
Say goodbye to 2020, and hello to 2021 in Fairmont Pacific Rim style with a New Year’s Eve celebration to-go. Complete with all the celebratory provisions to ring in the New Year including a spread of hot and cold canapés, cheese and charcuterie boards, and dips with accompaniments. Just heat, serve, and countdown to 2021. The New Year’s takeaway serves 4-6 guests for $180.00 CAD, and advance pre-orders are required before December 28 at noon, by ordering online.
