Botanist will celebrate the holiday season with multi-course festive brunch on Christmas Eve, Christmas Day, and New Year’s Day featuring a selection of carving stations seasonal punch cocktails, for $76.00 CAD. A six-course dinner tasting menu is offered on Christmas Eve and Christmas Day for $135 CAD per person accompanied by live music.

On New Year’s Eve, two seatings are available as executive chef Hector Laguna prepares an exclusive six-course tasting menu featuring Brant Lake Wagyu Striploin and Pan Seared Diver Scallop, accompanied by live music. The first seating, from 5:00pm – 7:00pm is available for $148.00 CAD per person with music from Adam Thomas Duo. The second seating, beginning at 8:30pm for $168 CAD per person, includes midnight countdown and a glass of bubbles with music from the Sophia Danai Trio.

Oh Tiffany Tree, How You Shine So Blue

For the first time, Fairmont Pacific Rim and Tiffany & Co. have partnered to present an iconic 15-foot holiday tree shining brightly in the hotel lobby. Designed by Tiffany & Co, this magical holiday moment is brought to life with signature Tiffany blue and silver ornaments. Warm up this season with gourmet sips from the Tiffany & Co. ‘Hot Cocoa Cart’ making pop-up appearances in the lobby.

The Lobby Lounge and RawBar is taking group reservations for guaranteed one hour lunches with friends and co-workers. Lunch includes a welcome glass of sparkling or sake and includes Sushi Chef Taka Omi’s 100% Ocean Wise gourmet Bento Box. The celebratory lunches are available Monday – Friday for $46 CAD per person.

Guests looking to host their intimate holiday party in the evening can reserve the exclusive Bob Dylan-inspired communal tables with choice of fresh BC sashimi sushi or a West Coast Oyster Platter, and includes a welcome glass of sparkling wine and a holiday inspired cocktail. Reservations available Monday – Friday for $62 CAD per person.

A Not So Silent New Year’s at The Lobby Lounge

Ring in the New Year with live music from The Suits with guaranteed seating from 9:00pm, choice of featured small plate, midnight countdown with bubbles and specialty cocktail features for $139 CAD per person.
