From April 21 to 23, in celebration of North America’s 50 Best Bars 2026, bartenders, tastemakers and cocktail enthusiasts will gather for three spirited days of creativity, craft and connection. At Fairmont Pacific Rim, the action doesn’t stop. We’re hosting an exciting series of pop-ups and parties, designed to stir the scene and toast the best in the business.

an evening with zest 7:30pm – 11:00pm | Botanist Bar Join Fairmont Pacific Rim’s Creative Beverage Director Grant Sceney and the Botanist team as they welcome Seoul’s Zest, currently ranked No. 2 on Asia’s 50 Best Bars list and No. 16 on World’s 50 Best Bars list — bringing their “sustainable fine drinking” ethos to Botanist Bar with three cocktails. Guests will also have a chance to enjoy some exclusive bar bites by executive chef Hector Laguna. Walk-ins welcome.
