North America’s 50 Best Bars Pop-Up Series

This month, some of the world’s best bars are coming to Vancouver – and we’re ready to raise a glass.

From April 21 to 23, in celebration of North America’s 50 Best Bars 2026, bartenders, tastemakers and cocktail enthusiasts will gather for three spirited days of creativity, craft and connection.

At Fairmont Pacific Rim, the action doesn’t stop. We’re hosting an exciting series of pop-ups and parties, designed to stir the scene and toast the best in the business.

TUESday, april 21

Our pop-up series kicks off highlighting Canada’s dynamic cocktail culture with Toronto standouts Library Bar and Mother Cocktail Bar, and continues with one of Asia’s most celebrated bars: Seoul’s Zest, currently ranked No. 2 on Asia’s 50 Best Bars list.

    Join James Grant from Toronto’s Library Bar and Massimo Zitti from Toronto’s Mother Cocktail Bar for an afternoon celebrating Canada’s dynamic cocktail culture in The Lobby Lounge and RawBar.

    7:30pm – 11:00pm | Botanist Bar

    Join Fairmont Pacific Rim’s Creative Beverage Director Grant Sceney and the Botanist team as they welcome  Seoul’s Zest, currently ranked No. 2 on Asia’s 50 Best Bars list and No. 16 on World’s 50 Best Bars list — bringing their “sustainable fine drinking” ethos to Botanist Bar with three cocktails. Guests will also have a chance to enjoy some exclusive bar bites by executive chef Hector Laguna.

Kick off awards night with a cocktail in hand. Botanist will welcome one of New York City’s most talked-about cocktail destinations, Clemente Bar — created by renowned chef Daniel Humm in collaboration with artist Francesco Clemente, and currently No. 11 on the North America’s 50 Best Bars list — for a special appearance ahead of the awards ceremony.

the spirit of the caribbean

The Lobby Lounge & RawBar will host The Caribbean Cocktail Tour, an immersive evening featuring three of the region’s most iconic bars: Library by the Sea, Bon Vivants, and La Factoria. Guests can expect vibrant, destination-inspired cocktails that capture the spirit and flavours of the Caribbean, thoughtfully paired with The Lobby Lounge’s internationally inspired menu.

To close out the celebrations, join us for an exclusive evening with ARCA from Tulum and Mecenas from Guadalajara. Enjoy a six-course tasting menu by ARCA’s chef-owner José Luis Hinostroza and Botanist’s executive chef Hector Laguna; cocktail pairings by Mecenas and ARCA.
