On November 1 and 2, 2026, Fairmont Pacific Rim will host its fifth annual celebration of Día de los Muertos with special activations throughout the hotel. This year’s events will honour Día de los Muertos with an immersive collaboration dinner and cocktail-paired experience. Join us on Sunday, November 1, as Botanist Executive Chef Amanda Healey and Executive Pastry Chef Chad Yamagata reunite with Chef Hector Laguna and welcome Chef Maria Ponce of Vancouver’s Chupito for the fifth annual Día de los Muertos collaboration dinner. Together, the chefs will present a six-course, Mexican-inspired tasting menu showcasing locally foraged and fished ingredients, including Sablefish and Wagyu. Each course will be complemented by a cocktail pairing from Tadia Rosen of Chupito and Botanist Bar in honour of this meaningful tradition. Festivities continue on Monday, November 2, with a spirited Día de los Muertos celebration in Lobby Lounge.
