Throughout the summer, featured chefs and restaurant will design a summer-inspired dish that will be available only for four days at the Pac Rim Patio. From Thursday, July 13 – Sunday, July 16, we will welcome Botanist and their feature dish for four days.

Recognized as Vancouver’s living room, bringing the community together through unique cultural experiences, this new concept will invite guests to immerse in the culinary fabric of the city by grabbing hold of their imaginations and appetites with dishes rooted in the heritage of each highly lauded chef’s innovative cooking style. This is the latest program in Fairmont Pacific Rim’s ongoing mission to celebrate, showcase and support artistry in all forms.

For every feature chef dish sold, partial proceeds will be donated to the BC Hospitality Foundation.

Along with the weekly rotation of guest chef dishes, Executive Chef Damon Campbell’s food truck menu will serve a playful menu perfect for outdoor dining. To accompany Campbell’s dishes, Creative Beverage Director Grant Sceney has assembled a line-up of refreshing Malfy Gin cocktails including G&T’s, Spritzes, and other summertime sippers, alongside an extensive selection of craft beers, local and international wines.

The Pac Rim Patio will be open Monday to Sunday from 12:00 p.m. to 8:00 p.m., with live music daily on Fridays and Saturdays until 8:00 p.m., and 6:00 p.m. every Thursday and Sunday. Seating on the Pac Rim Patio Pop-Up is available on a first come first serve basis and weather dependent. Rain or shine, The Lobby Lounge & RawBar is open for daily service from 11:00 a.m. until late.
