A celebration for the art of cocktail making, Vancouver Cocktail Week is now in its third year from March 3 to 10. The series of events will be hosted at various venues across the city and will provide award-winning bartenders with the platform to showcase their unadulterated skills and bring together bartenders, beverage enthusiasts and industry professionals from around the world to indulge in world-class libations. From industry talks to exclusive bar collaborations, Fairmont Pacific Rim is thrilled to host various events throughout Vancouver Cocktail Week.

BAR SWIFT

Botanist is thrilled to announce our first bar collaboration of the year with Bar Swift. The original Bar Swift located in London’s Soho neighbourhood was recognized as the 30th best bar in the world in the 2022 World’s 50 Best Bars list and was also ranked 5th in the UK Best 50 Bars in 2023. The bar draws inspiration from the sophisticated European bar scene where a quick drink is the perfect way to mark the end of the day and the start of the night.

  • Signature Sunday Cocktail Brunch

    Join us on March 3 for a Signature Sunday Cocktail Brunch that serves as Vancouver Cocktail Week’s marquee opening event and will feature a five-course cocktail-paired brunch designed by Executive Chef Hector Laguna, together with a collaborative cocktail menu developed by Creative Beverage Director Grant Sceney and the Bar Swift team.

  • Vancouver Cocktail Week 7

    Cracked Ice Cocktails

    The Swift team will pop-up in Botanist Bar for a second night on Tuesday, March 5, where they will showcase their signature method of ‘cracked ice’ cocktails, an eye-catching technique of carving from an artisanal block of ice.

    Reservations are not required.

  • Six-Course Plated Dinner

    To round out the Vancouver Cocktail Week celebrations, on Wednesday, March 6, Botanist’s Executive Chef Hector Laguna will craft a sensory six-course dinner, with each course paired with cocktails by Fairmont Pacific Rim’s Creative Beverage Director Grant Sceney and the Swift team.

    ‘FOR THE LOVE OF COCKTAILS’ POP UP AT BOTANIST

    Join hospitality expert, serial entrepreneur and Author of ‘For the Love of Cocktails’ Evelyn Chick for a cocktail hour on Friday, March 1, at 5:00pm showcasing some delicious libations from her book. Named one of Indigo’s most anticipated fall launches in 2023, For the Love of Cocktails is a delightful cocktail guide for drink enthusiasts of all skill levels. Limited signed copies of the book will be available for purchase on site.

  • INDUSTRY TALK – ‘HOSPITALITY ROADMAP’ TO ENTREPRENEURSHIP

    Hospitality expert, author and serial entrepreneur Evelyn Chick shares her journey from global bartender to multi-business owner in an honest and open discussion on Tuesday, March 5 at 3:30pm at the Botanist Garden, on how to navigate the future of hospitality by investing in yourself and leaning into community, creating opportunities unknown.
